Cuisine

Our cuisine stands out mainly for the quality of its ingredients
and the love put into all the processes and elaborations

We offer fresh local seafood such as snow crab (a representative Hokurikuwinter delicacy), black throat seaperch, and abalone nurtured by the nutrient-rich Sea of Japan, as well as mountain delicacies such as Noto beef and Sakaami duck, along with dishes made with local rice, soy sauce, and miso all served with love in Kutani ware.

Our Cuisine

Hot spring-steamed cuisine
Pulling out the essence of the food ingredients

Natural hot spring-steamed local abalone with all the fragrance and umami locked as no oil is used. This is how we unveil the essence of exceptional food ingredients.
